Rice Pudding

A simple, elegant, yet sweet and delicious desseert.

Ingredients
  

  • 2 Eggs Beaten
  • 1/3 Cup Sugar
  • 1 Tsp Vanilla
  • 1 Tsp Ground Cinnamon
  • 1/4 Tsp Salt
  • 2 Cups Milk
  • 1 3/4 Cooked Rice
  • 1 Cup Raisins

Instructions
 

  • In a saucepan, cook the rice as per the package directions.
  • Preheat oven to 350F
  • In a bowl, combine eggs, sugar, vanilla, salt, and cinnamon. Gradually stir in milk into the mixture.
  • In a 9x9 Pyrex, combine the cooked rice and the raisins.
  • Pour the egg and milk mixture over top of the rice and raisins.
  • Bake at 350F until the milk is completely evaporated (approximately 45 to 60 minutes depending on the oven).
  • Let cool completely. Serve in a bowl and top with milk. Add additional cinnamon if you'd like.
