Rice Pudding
A simple, elegant, yet sweet and delicious desseert.

- 2 Eggs Beaten
- 1/3 Cup Sugar
- 1 Tsp Vanilla
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Salt
- 2 Cups Milk
- 1 3/4 Cooked Rice
- 1 Cup Raisins
In a saucepan, cook the rice as per the package directions.
Preheat oven to 350F
In a bowl, combine eggs, sugar, vanilla, salt, and cinnamon. Gradually stir in milk into the mixture.
In a 9x9 Pyrex, combine the cooked rice and the raisins.
Pour the egg and milk mixture over top of the rice and raisins.
Bake at 350F until the milk is completely evaporated (approximately 45 to 60 minutes depending on the oven).
Let cool completely. Serve in a bowl and top with milk. Add additional cinnamon if you'd like.
