Deliciously Simple Mediterranean Chicken

  • 1 Pan (I use cast iron)

Ingredients
  

  • 3 Chicken Breats
  • 1/2 Cup Sundried Tomatoes (in oil) diced
  • 3 Tbsp Oil from Sundried Tomatoes
  • 1 Cup Spinach chopped
  • 3 Cloves of Garlic minced
  • 2 Tsp Spicy Pepper Medley
  • 1/3 Cup Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 1/4 Cup Parmesan Cheese grated

Instructions
 

  • Preheat oven at 400°F
  • Put chicken breast on baking sheet and add salt and pepper (or your favorite spices).
  • Bake for 25 minutes.
  • Remove, let cool, then slice chicken into pieces.
  • Heat a pan on stove top, and pour 3 tbsps of oil from the sundried tomatoes into the pan. Add the chicken, and sundried tomatoes to the pan and fry it up so that it's a little crispy.
  • Add the garlic and stir until fragrant. Then add the spinach. Remove from heat and allow the spinach to wilt.
  • Sprinkle with Parmesan cheese, and toss.
  • Plate the dish.
  • In a ramkin (or small bowl) add the olive oil, balsamic vinegar, and the spicy pepper medley. Drizzle over top.
  • Can also be served over rice or pasta.
