Deliciously Simple Mediterranean Chicken

- 3 Chicken Breats
- 1/2 Cup Sundried Tomatoes (in oil) diced
- 3 Tbsp Oil from Sundried Tomatoes
- 1 Cup Spinach chopped
- 3 Cloves of Garlic minced
- 2 Tsp Spicy Pepper Medley
- 1/3 Cup Olive Oil
- 1/4 Cup Balsamic Vinegar
- 1/4 Cup Parmesan Cheese grated
Preheat oven at 400°F
Put chicken breast on baking sheet and add salt and pepper (or your favorite spices).
Bake for 25 minutes.
Remove, let cool, then slice chicken into pieces.
Heat a pan on stove top, and pour 3 tbsps of oil from the sundried tomatoes into the pan. Add the chicken, and sundried tomatoes to the pan and fry it up so that it's a little crispy.
Add the garlic and stir until fragrant. Then add the spinach. Remove from heat and allow the spinach to wilt.
Sprinkle with Parmesan cheese, and toss.
Plate the dish.
In a ramkin (or small bowl) add the olive oil, balsamic vinegar, and the spicy pepper medley. Drizzle over top.
Can also be served over rice or pasta.
