Deliciously Simple Mediterranean Chicken Recipe

Deliciously Simple Mediterranean Chicken
Equipment
- 1 Pan (I use cast iron)
Ingredients
- 3 Chicken Breats
- 1/2 Cup Sundried Tomatoes (in oil) diced
- 3 Tbsp Oil from Sundried Tomatoes
- 1 Cup Spinach chopped
- 3 Cloves of Garlic minced
- 2 Tsp Spicy Pepper Medley
- 1/3 Cup Olive Oil
- 1/4 Cup Balsamic Vinegar
- 1/4 Cup Parmesan Cheese grated
Instructions
- Preheat oven at 400°F
- Put chicken breast on baking sheet and add salt and pepper (or your favorite spices).
- Bake for 25 minutes.
- Remove, let cool, then slice chicken into pieces.
- Heat a pan on stove top, and pour 3 tbsps of oil from the sundried tomatoes into the pan. Add the chicken, and sundried tomatoes to the pan and fry it up so that it's a little crispy.
- Add the garlic and stir until fragrant. Then add the spinach. Remove from heat and allow the spinach to wilt.
- Sprinkle with Parmesan cheese, and toss.
- Plate the dish.
- In a ramkin (or small bowl) add the olive oil, balsamic vinegar, and the spicy pepper medley. Drizzle over top.
- Can also be served over rice or pasta.
