Rice Pudding
Ingredients
- 2 Eggs Beaten
- 1/3 Cup Sugar
- 1 Tsp Vanilla
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Salt
- 2 Cups Milk
- 1 3/4 Cooked Rice
- 1 Cup Raisins
Instructions
- In a saucepan, cook the rice as per the package directions.
- Preheat oven to 350F
- In a bowl, combine eggs, sugar, vanilla, salt, and cinnamon. Gradually stir in milk into the mixture.
- In a 9x9 Pyrex, combine the cooked rice and the raisins.
- Pour the egg and milk mixture over top of the rice and raisins.
- Bake at 350F until the milk is completely evaporated (approximately 45 to 60 minutes depending on the oven).
- Let cool completely. Serve in a bowl and top with milk. Add additional cinnamon if you'd like.
