Carrot Cake Muffins with Maple Frosting
Ingredients
Carrot Cake Muffins
- 1.5 Cups Whole Wheat Flour
- 1 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Tsp Ground Cinnamon
- 1/2 Tsp Ground Nutmeg
- 1/4 Tsp Ground Ginger
- 1/2 Cup Sugar
- 1/2 Cup Brown Sugar
- 2 Large Eggs
- 1/2 Cup Butter unsalted, melted
- 1 Tsp Vanilla Extract
- 2 Cups Grated Carrots about 3 medium
- 3/4 Cup Raisins
- 1 Cup Chopped Walnuts divided in half
Maple Frosting
- 1/2 Cup Butter unsalted, melted
- 1/4 Cup Maple Syrup
- 2 Cups Confectioner's Sugar
- 1 Tsp Maple Flavor or Maple Extract optional
Instructions
To Make The Muffins
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, whisk together the granulated sugar, brown sugar, eggs, butter, and vanilla extract until smooth and well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the grated carrots, raisins, and half the chopped nuts until evenly distributed in the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Maple Frosting + Assembly
- In a bowl, add all ingredients and mix until well blended.
- Top each muffin with the icing and with some chopped walnuts.
- Serve and enjoy!
Notes
- You can replace the whole wheat flour with all-purpose flour and this recipe will work just the same.
